Beat the Bulge with Beets

Even if you didn't like eating beets growing up, now's a great time to give them another try. Beets are at their peak from June through October and are one of the healthiest veggies around. Here are four great reasons you can't beat the beet:

1. They help protect against colon cancer.

2. They're high in the B vitamin folate, which protects against birth defects.

3. Their antioxidants provide protection against heart disease.

4. One cup of beets has only 74 calories!

Beets can be stored in your fridge for two to four weeks before using them. Try them added to your salads, or roasted or steamed with greens for a delightfully light and healthy summer meal.
