Want to reduce your carbon footprint while also reducing your cravings? Try going "meatless" twice a week. Not only will you be eating eco-friendly, but you can also eat healthy with lots of good protein to fill you up. Start with these three meatless meals:
1. Like your all-beef burgers? Try a soy burger to start (bonus points if you serve it on a 100 percent whole-grain bun). Soy burgers now come in many varieties with many flavors, or you can make your own. (Note that there's been some controversy lately about hexane, a neurotoxin, in soy burgers, but the results are inconclusive.)
2. Cook up some beans, brown rice and veggies for a quick and satisfying dinner.
3. Try some tofu in a stir-fry. The tofu will absorb the flavors of the spices in your dish and taste totally delicious.
