A NOTE FROM DR. AL SEARS ON RAW FOODS

Eat fresh, raw foods.

The reason I say this is because many raw foods contain powerful enzymes.

And these enzymes act as a shield for your body. They keep your immune system running properly. And help protect you from sickness and disease.

You see, when you cook – or in some cases overcook – your food, it breaks down vitamins and removes the nutrients that naturally occur in most foods.

And when you use high temperatures to cook your foods, it can trigger a process called glycation.

This is when protein and glucose molecules bind. The result is a spoiled protein assembly of deviants called glycotoxins. And glycotoxins are responsible for accelerated aging and disease.

As the glycotoxins accumulate in your cells, they send out chemical signals. The body responds by producing sites of inflammation. In addition, the abnormal protein structures don’t regenerate. They remain damaged for good.

So when you cook foods at high temperatures, large amounts of glycotoxins collect in the food. And if you eat these foods, the glucotoxins transfer to your tissues.

But here’s the good news...

Just by changing your cooking habits, you can enjoy good food without the danger.

Instead, you may want to try steaming, stewing, boiling or poaching. These methods of cooking can reduce the number of glycotoxins in your food because you’ll be cooking it at a lower heat. To make your meals tasty, use spices and fresh herbs.
