3 Reasons to Save Your Pumpkin Seeds

Sure, pumpkins are everywhere this season, from pies to soups to roasted pumpkin salads. But one especially nutritious part of the pumpkin often gets overlooked—the seeds. Here are three reasons to enjoy these nutty, crunchy treats inside the pumpkin:

1. Pumpkin seeds are rich in minerals and vitamins. They're a very good source of manganese, magnesium and phosphorus, and a good source of iron, vitamin K, zinc and protein.

2. Roasted, unsalted pumpkin seeds have only 5 grams of fat per ounce—much less than the 15 grams of fat per ounce found in peanuts.

3. They're easy to make! Just remove them from the inside of the pumpkin, dry them overnight and then roast them in the oven for about 15 to 20 minutes. Besides enjoying them as a tasty snack, sprinkle them on salads or mix them into a vegetable medley for an extra-satisfying crunch!
